Thick steak fries and wedges hold more potato, so they need the top of the range or a couple of minutes more. When in doubt, glance at the bag — most give an air-fryer time now — then trust your eyes over the timer.
Crisp, not soggy: airflow is everything
A single layer always crisps best because the fan can reach every surface. Frozen fries forgive a little piling, but a heaped basket traps steam and leaves a soft, pale patch in the middle — the fix is to cook in batches or simply shake more often. A shake or toss once or twice redistributes the fries so none are left hiding from the heat. For extra-crisp results, give them a final two minutes after you think they’re done; they firm up further as they cool.
Seasoning and dips
Season the moment they come out, while the surface is hot and slightly steamy — salt sticks best then. If you want the seasoning to cling during cooking, a very light spray of oil helps, but it isn’t required.
